The German brand of SONNENSALZ® was created in 1925. For more than 80 years now, German households have been enjoying this food-grade vacuum salt of highest purity.

 

The brand name - "Sonne" is the German word for "sun", and "Salz" means "salt" - was chosen with the origin of the salt deposits in mind, which esco is using for the production of SONNENSALZ®. These salt deposits have been built over the period of millions of years by, simplified speaking, solar radiation: Parts of the primeval ocean covering huge parts of the European continent millions of years ago were cut off by the rising and falling of the earth's crust. The water in these cut-off areas slowly evaporated bit by bit, due to the very dry and hot climate as well as to the strong sunlight, leaving an ever decreasing quantity of sea water with an ever increasing concentration of salt, in which the minerals - gypsum, rock salt, potash and magnesium salts - crystallised one after the other, according to their solubility. Frequent repetitions of this process over the space of millions of years resulted in giant salt deposits that can be found in Europe at various depths and in various grades of purity.

 

This is how the particularly pure primeval salt deposits formed at depths of 500 to 700 m that are leached to obtain the brine that esco SONNENSALZ® is made from. esco SONNENSALZ® is also available enriched with essential trace elements, such as iodine and fluoride.
